If you’re intimidated by yeast, don’t be — this recipe uses active dry yeast and a short activation step that’s easy even for beginners. A little olive oil and honey keep the crumb tender, while fresh rosemary (or dried if needed) plus garlic butter brushed on after baking make the rolls irresistible.

How to make 30-minute dinner rolls

Begin by activating the yeast. Stir the active dry yeast into very warm water and let it sit for about 5 minutes until foamy. If it doesn’t foam, the yeast may be inactive — start over with fresh yeast.

When the yeast is bubbly, add the olive oil, honey, beaten egg, rosemary, dried parsley, garlic powder, sea salt and 1 cup of the flour. Mix briefly until combined. If using a stand mixer, switch to the dough hook and add the remaining flour, mixing on medium-high for about 5 minutes until the dough is soft and no longer sticky. If the dough is tacky, add flour 1 tablespoon at a time. You can also knead by hand for about 5–7 minutes.

Divide the dough into 12 equal pieces. An easy way is to halve the dough, halve each half, then divide those quarters into thirds. Roll each piece between your palms until smooth and place them in a greased cast iron skillet or an 11 x 7″ baking pan, leaving a little space between rolls. Cover with a clean towel and let them rest for 10 minutes.

Bake at 400°F for 12–14 minutes, or until the tops are lightly golden. Meanwhile, melt unsalted butter and stir in minced garlic to make the garlic butter. Brush the warm rolls with the garlic butter as soon as they come out of the oven and sprinkle a little sea salt on top if you like. Serve immediately for best texture and flavor.

Fresh vs. dried rosemary

Fresh rosemary adds the best flavor, but dried rosemary works in a pinch. If you don’t have fresh, substitute approximately 2 teaspoons of dried rosemary.

Ingredients

  • 1 cup + 2 tbsp very warm water
  • 2 tbsp active dry yeast
  • 1/3 cup olive oil
  • 1/4 cup honey
  • 1 egg, lightly beaten
  • 1 tbsp fresh rosemary* (or 2 tsp dried)
  • 2 tsp dried parsley
  • 2 tsp garlic powder
  • 1/2 tsp sea salt
  • 3 cups all-purpose flour

Garlic Butter

  • 3 tbsp unsalted butter, melted
  • 2 garlic cloves, minced

Instructions

  1. Preheat the oven to 400°F and grease a large cast iron skillet or an 11 x 7″ baking pan.
  2. Pour the warm water into a mixing bowl and stir in the yeast. Let rest 5 minutes until foamy. If it does not foam, the yeast may be inactive; try fresh yeast.
  3. Add the olive oil, honey, egg, rosemary, parsley, garlic powder, sea salt and 1 cup of flour. Mix until combined. Add the remaining flour and knead: with a stand mixer and dough hook, knead on medium-high for about 5 minutes; or knead by hand for 5–7 minutes. Add flour 1 tablespoon at a time only if the dough remains sticky. The finished dough should be soft but not sticky.
  4. Divide the dough into 12 equal pieces. Roll each piece into a smooth ball and place in the prepared pan, leaving 1–2″ between them. Cover with a clean towel and let rest 10 minutes. Bake 12–14 minutes, until lightly golden on top.
  5. While baking, combine melted butter and minced garlic. Brush the warm rolls with the garlic butter as soon as they come out of the oven. Sprinkle with extra sea salt if desired and serve immediately.

Store rolls in an airtight container at room temperature for 1–2 days or freeze fully cooled rolls for up to 2 months.

*If fresh rosemary isn’t available, substitute 2 teaspoons dried rosemary.
