  2. For bakery-style domes, line a 12-cup muffin pan with six liners, filling every other cup. Scoop about 2 tablespoons of batter into each liner for the initial layer.

Without removing the pan, reduce the oven temperature to 350ºF (180ºC) and bake 12–14 minutes more, or until a toothpick inserted in the center comes out clean. Let muffins cool in the pan. Repeat with the remaining batter, bringing the oven back to 425ºF for the first stage of the next batch.

How to Create Bakery Style Muffins

1. The Rest Period

Let the batter rest for 15 minutes after mixing. During this time, the flour absorbs liquid and the batter thickens, which helps produce a higher rise in the oven.

2. Fill Every Other Muffin Cup

Using only every other cup in a 12-count pan prevents muffins from spreading into each other and encourages upward rise and even browning, giving you a bakery-style dome.

3. Fill Them To The Top

Fill liners to the top with batter. This may feel counterintuitive, but it helps the muffin gain height and form a domed top.

4. Bake at High Temperature Initially

Start baking at a high temperature (425ºF / 220ºC) for a short time to set the outer edges while the interior rises. Then reduce the temperature to finish baking through without overbrowning.

How to Properly Measure Flour

  • Aerate the flour by whisking or stirring to fluff it up.

  • 1 cup (84g) natural unsweetened cocoa powder
  • 1 1/2 cup (300g) granulated sugar
  • 4 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp salt
  • 3 large eggs
  • 1 1/2 cup (360ml) buttermilk
  • 1/2 cup (118ml) vegetable oil
  • 1 tsp vanilla extract
  • 2/3 cup (167g) creamy peanut butter

Instructions

  • Combine the flour, cocoa powder, sugar, baking powder, baking soda, and salt in a bowl and set aside.
  • Whisk the eggs, buttermilk, vegetable oil, and vanilla in a larger bowl until combined.
  • Fold the dry ingredients into the wet ingredients until just combined; batter will be thick.
