Ingredients

  

  • 500 g Lean Beef Mince
  • Spray oil
  • 1 Onion, finely diced
  • 1 tablespoon Garlic Puree (or 5 cloves garlic)
  • 1 teaspoon Chilli Puree (or 1–2 fresh chillies)
  • 4 teaspoons Garam Masala (or curry powder)
  • 3 Curry Leaves (or 2 bay leaves)
  • 2 Carrots, diced
  • 2 Parsnips, diced
  • 300 ml Beef stock
  • 100 g Frozen peas
  • 2 Large sweet potatoes, thinly sliced

To serve

  • 1 tablespoon chopped fresh coriander
  • Salt and pepper, to taste

Instructions

  • Preheat the oven to 200°C fan / 400°F. Peel and finely dice the onion, carrots and parsnips. Peel and thinly slice the sweet potatoes.

    Spray a pan with oil and sauté the onion for about 5 minutes. Add the beef mince and break it up with a wooden spoon, cooking until browned.

  • Stir in the garam masala, curry leaves, garlic puree and chilli puree, then add the diced carrots and parsnips. Cook until the mince is well browned and the vegetables begin to soften.

  • Pour in the beef stock, season with salt and pepper and simmer for 10 minutes to develop the flavours.

  • While the mince simmers, parboil the sweet potato slices: cover with water, bring to the boil, then simmer for 5 minutes. Drain immediately — do not overcook or they will fall apart.

  • Remove the curry leaves from the mince, stir in the frozen peas and adjust seasoning with salt and pepper.

  • If your pan is oven-safe, layer the parboiled sweet potato slices directly on top of the mince. Otherwise transfer the mince to a casserole dish and then arrange the slices to cover the surface.

  • Generously spray the sweet potato with oil, place the dish on the top shelf of the oven and cook for 20 minutes. After 10 minutes, spray again to encourage a golden finish.

  • Remove from the oven, scatter with chopped coriander and an extra grind of black pepper. Serve hot and enjoy.

Mince

Choose mince based on your dietary goals. For best flavour, 15–20% fat mince gives succulence and mouthfeel. For Slimming World or a low-fat approach, use lean beef mince (around 5% fat) which is syn-free. Lamb mince can be used but tends to be higher in fat.

What mince should I use for Slimming World?

If following Slimming World or a low-fat plan, choose lean beef mince (5% fat) to avoid adding syns. If you use higher-fat mince, account for the extra syns accordingly.

Oil

For low-fat cooking use a spray oil such as Frylight to brown onions and mince without adding significant fat. Regular olive oil or vegetable oil can be used if not following a low-fat plan.

Vegetables

This hotpot base is similar to a beef keema, with mince and peas, but includes extra vegetables: onion, carrot and parsnip for added texture and nutrients. Sweet potato makes a tasty, slightly sweet topping but you can swap to regular potatoes or a mix if preferred.

Spices

Instructions

Start by preparing the mince base: brown the finely chopped onion, add the mince and break it up. Add spices, garlic and chilli, then stir through the diced carrots and parsnips.

After the mince has browned, add stock and simmer to concentrate the flavours.

Once the curried mince has simmered, remove the curry leaves, add frozen peas and season to taste. Transfer to a casserole dish if necessary.

Parboil sliced potatoes

Parboil sweet potato slices for about 5 minutes in just enough water to cover, then drain immediately. Overcooking will make them too soft to layer.

How to layer hotpot potatoes

Arrange the parboiled sweet potato slices to slightly overlap and completely cover the mince layer. Spray with oil and season with salt and pepper.

Oven Cooking Time

Bake the hotpot in the oven for 20 minutes. Halfway through, add another spray of oil and you can increase the temperature briefly to help the sweet potato develop a golden crust.
