All Purpose Flour
All-purpose flour works well for these cookies. Measuring by weight yields the best results, but spooning and filling the cups works if you don’t have a scale.

Baking Soda and Baking Powder
This recipe uses both baking soda and a bit of baking powder for balanced leavening. If you must substitute, use three times the baking powder for baking soda (for example, 1 teaspoon baking soda = 3 teaspoons baking powder), adjusting totals accordingly.
Butter
Use unsalted butter, softened to room temperature. If you only have salted butter, omit added salt in the recipe. To soften quickly, cut the butter into tablespoon pieces and let them sit in a bowl while you warm a bowl of water in the microwave, then place the butter bowl inside the warm bowl for a few minutes—this speeds softening without melting the butter.
Eggs
Large eggs at room temperature blend more evenly into the dough. If you keep farm-fresh eggs at room temperature, they will already be ready to use.
Filled Caramel Baking Truffles
Caramel-filled baking truffles add a decadent, sticky center and pair beautifully with sweetened shredded coconut. If you can’t find them, regular chocolate chips can be used, though the texture and flavor will differ.

When these salted-caramel chocolates melt inside the cookie, they create a soft, chewy center that elevates an ordinary cookie into an indulgent treat.

Filled Caramel Truffles with Coconut Cookie Recipe
Ingredients
- 360 grams All Purpose Flour (about 3 cups, spoon and fill)
- 1 teaspoon Salt
- 1 teaspoon Baking Soda
- ½ teaspoon Baking Powder
- 1 cup Unsalted Butter, softened (two sticks)
- 1 ¼ cup Brown Sugar, packed
- ½ cup Sugar
- 2 teaspoons Vanilla Extract
- 2 Eggs, large
- 2 cups Shredded Sweetened Coconut
- 9 ounces Nestle Salty Sweet Caramel Baking Truffles (one bag)
- Cooking Spray (like Pam)
Instructions
- Preheat oven to 350°F (175°C).
- Whisk together flour, salt, baking soda, and baking powder in a medium bowl. Set aside.
- In a large bowl, beat butter, brown sugar, sugar, and vanilla until creamy.
- Add eggs one at a time, mixing well after each addition.
- Gradually add the flour mixture, about ½ cup at a time, mixing until combined.
- Stir in shredded coconut and caramel baking truffles.
- Line cookie sheets with parchment paper and lightly spray with cooking spray. Scoop dough into 1½ tablespoon portions (or use a 2″ cookie scoop) and place 2 inches apart on the prepared sheets. To slightly flatten, spray a second parchment sheet and place it sprayed-side down over the dough balls, press gently with a flat-bottomed glass, then remove the top sheet.
- Bake for 11–14 minutes, or until edges are lightly golden. If using a 1.5″ cookie scoop, bake 8–10 minutes.
- Remove from oven and transfer cookies immediately to a wire rack to cool completely before storing. Makes about 24 cookies.
Notes
The total time assumes baking about 12 cookies per batch. If you can bake more at once, total time will decrease. If you cannot find caramel-filled truffles, regular chocolate morsels may be substituted.
Important: For best results measure dry ingredients by weight. If you don’t have a scale, stir the flour lightly and use the spoon-and-fill method. Too much flour will make the cookies dry and crumbly.
