How to Make Keto Zuppa Toscana (Quick Overview)
Quick overview: For full details and exact measurements, see the recipe card at the end of the post.
Making this soup is straightforward. Start by browning the Italian sausage in a large soup pot.
TIP: Choose mild or hot Italian sausage based on your heat preference.

Remove the cooked sausage with a slotted spoon and set aside. In the remaining grease, cook the bacon and transfer it to a plate when done.
Drain excess fat from the pot, add butter, and sauté the diced onion until translucent. Add minced garlic, chopped red bell pepper, and chopped zucchini, and cook for about 4 minutes until softened.
TIP: If you prefer, skip the butter and sauté the vegetables in the reserved sausage and bacon grease for extra flavor.

Stir in chicken broth, heavy whipping cream, salt, pepper, the cooked Italian sausage, and chopped kale. Bring to a gentle simmer and cook about 5 minutes, until the kale is tender and the soup is heated through.

Remove from heat, crumble the bacon, and either stir it into the pot or use it as a garnish for each bowl.

This soup is hearty enough to serve on its own, though it pairs nicely with low-carb garlic bread or roasted vegetables if you’d like a side.
