Ginger and Clove Cookies
These keto ginger and clove cookies are simple to make, grain-free and low in carbs. They create a crunchy, warmly spiced biscuit that is perfect as an occasional snack.
Recipe
Ingredients
- 1 3/4 cups Almond flour
- 3 tbsp Erythritol (or preferred keto sweetener)
- 2 tsp ground ginger
- 1/4 tsp ground cloves
- 1 tsp ground cinnamon
- 1/4 tsp ground nutmeg
- 1/4 cup unsalted butter
- 1 Egg
- 1 tsp vanilla extract
- 1/4 tsp salt
Instructions
- Preheat the oven to 375°F (180°C). Line a baking tray with baking paper.
- In a bowl combine all dry ingredients: almond flour, erythritol, ground ginger, cloves, cinnamon, nutmeg and salt.
- In a separate bowl cream the butter briefly, then add the egg and vanilla. Mix the wet ingredients into the dry ingredients until a dough forms.
- Roll the dough into 12–14 small balls, place on the prepared tray and gently press each ball flat with a fork.
- Bake for 12–15 minutes or until the tops are lightly browned. Allow to cool, then store in an airtight container.
