Homemade Chewy Granola Bars Recipe for Snacks & Lunchboxes

“You know, you are never going to win the election….” I can’t tell you how often I’ve heard that since launching my campaign for the Marshall School Board. I may not be the most recognized candidate in town, but I am deeply committed to supporting and improving public education.

This week I also heard a rumor that some people believe I homeschool my children and therefore question why I would run for the school board. I welcome voters to take a few minutes to learn about all five candidates and make an informed decision.

After a discouraging encounter with a well-meaning voter over the weekend, I needed a pick-me-up. I baked—chocolate, of course. Instead of falling back on a familiar recipe to soothe my mood, I tried something new. Baking gave me a little perspective and reminded me why community involvement matters: small acts, whether in the kitchen or at a school board meeting, add up.

An easy, reliable recipe that makes great lunchbox snacks or a quick breakfast on the go.

  • Total Time: 38 minutes
  • Yield: 16 bars

Ingredients


Scale

  • 2 1/2 C quick oats
  • 1/2 C rice krispies
  • 1/4 C coconut
  • 1/2 C mini chocolate chips
  • 1/2 C brown sugar
  • 1/2 tsp salt
  • 1/2 C unsalted butter, softened
  • 1/4 C honey
  • 1/2 tsp vanilla

Instructions

  1. Mix all ingredients in a large bowl, or use an electric mixer with a paddle attachment.
  2. Press the mixture into a 9 x 13-inch pan using clean, damp hands.
  3. Bake at 350°F for 18 minutes.
  4. Score the bars as soon as they come out of the oven, let them cool completely, then cut into bars.

Notes

You can double the recipe and bake it on a rimmed half-sheet pan for a larger batch.
