Fresh melon is hard to beat in summer. Whether you prefer cantaloupe, honeydew, watermelon, or a more uncommon variety, melon’s sweet juiciness is perfect for warm-weather gatherings. For this version I used six different melons—Santa Claus melon, green honeydew, cantaloupe, watermelon, sunshine melon, and golden honeydew—arranged in a checkerboard for visual impact. If you can’t find specialty melons, stick with what’s available; it will still be delicious.

This salad is intended for melon lovers. The spicy balsamic glaze brightens the fruit and balances the sweetness, adding a subtle savory note from red pepper flakes or Aleppo pepper. The presentation is fun and simple: cube the melons, arrange them in a checkerboard pattern, sprinkle a bit of flaky salt, and finish with the glaze.

Ingredients

Spicy Balsamic Glaze

  • 1/3 Cup Balsamic Vinegar
  • 1/4 Cup Sugar
  • 1 Tsp Red Pepper Flakes or Aleppo Pepper
  • 1/4 Tsp Salt

Melon Salad

  • 2 Cups Cubed Cantaloupe
  • 2 Cups Cubed Watermelon
  • 2 Cups Cubed Honeydew
  • 2 Cups Cubed Santa Claus Melon see notes
  • 1/4 Tsp Maldon Salt see notes

Instructions

Spicy Balsamic Glaze

  • Add all glaze ingredients to a small saucepan and stir to combine. Bring to a boil.
  • Reduce heat and simmer on low, stirring frequently, for 8–10 minutes until the mixture thickens to a thin syrup. Remove from heat and let cool while you prepare the melon.

Melon Checkerboard Salad

  • Wash and dry the melons, cut them in half, scoop out seeds, and discard the centers.
  • Remove the rind either from halves or from slices, taking care to keep as much flesh as possible.
  • Cut the melon into roughly 1-inch cubes. Small curved sections will remain; save those for snacking or freeze for smoothies.

Putting It All Together

  • Arrange the cubed melon on a large flat tray in a checkerboard pattern, alternating colors for contrast.
  • Lightly sprinkle Maldon or a flaky sea salt over the melon for texture and balance.
  • Drizzle the cooled balsamic glaze over the arranged melon to taste.
  • Serve immediately and enjoy.

Notes

  • Prep time is estimated at 30 minutes because cubing multiple melons takes some time; your pace may vary.
  • Melon quantities are suggested for reference—feel free to use more or less depending on availability or preference.
  • If you can’t find Santa Claus melon, substitute any other melon you enjoy.
  • Aleppo pepper adds a mild fruity heat, but regular red pepper flakes work perfectly if Aleppo isn’t available.
  • Store any leftover balsamic glaze in the refrigerator for 3–4 days. It’s great on grain bowls, caprese, or pizza.
