Gluten Free Drop Biscuits
I’m always looking for easy ways to stretch a meal when company drops by or when I need a fast side. Drop biscuits are a handy, tasty solution—no rolling or kneading, just a quick mix and bake. They’re one of my favorite gluten free breads for a speedy dinner.

Drop biscuits come together in minutes and bake up tender and flavorful. They’re ideal when you want fresh bread without the fuss of yeast-based recipes.

Ryze Gluten Free Flour Blend
For these biscuits I used Ryze Gluten Free Flour Blend, a rice-based mix with no added gums. I’d heard good things from other gluten free bakers and was pleased with the results: a smooth texture without the grittiness that can appear in some gluten free bakes.
The blend performed well here, producing light biscuits with good structure and a pleasant mouthfeel.

Bacon, Cheddar & Chives
Bacon, cheddar, and chives are an unbeatable combination. These drop biscuits are packed with a full cup of shredded sharp cheddar (use the thick-cut shred for better texture) and about a half cup of crumbled bacon for savory depth. Chives add a fresh, onion-like brightness, and a touch of minced garlic enhances the overall flavor.
After combining the dry ingredients, work in a few tablespoons of butter until the mixture becomes crumbly, then stir in the cheddar, chives, and bacon. Add an egg and milk, mix to combine, drop spoonfuls onto a baking sheet, and bake until golden.

These biscuits are fast to prepare—about 10 minutes of hands-on time and roughly 18–20 minutes in the oven. From start to finish you can have fresh biscuits in under 30 minutes.

They pair beautifully with a wide range of dinners. Try them alongside chicken piccata, spaghetti and meatballs, or any hearty weeknight meal to add a special, home-baked touch.

Ryze Gluten Free Flour Blend worked exceptionally well in this recipe. If you enjoy baking gluten free, this blend is worth trying for tender, consistent results.

Ingredients
- 2 cups gluten free flour (I use Ryze Gluten Free Flour Blend)
- 1 1/2 teaspoons gluten free baking powder
- 1/2 teaspoon salt
- 3 Tablespoons softened butter
- 1 cup shredded cheddar cheese
- 1/2 cup crumbled bacon
- 2 Tablespoons chopped chives
- 2 teaspoons minced garlic
- 1 egg
- 1 cup milk
Instructions
- Preheat oven to 400 degrees.
- In a bowl, mix together the gluten free flour, baking powder, and salt.
- Work in the softened butter with a fork or pastry cutter until the mixture is crumbly.
- Stir in the cheddar, bacon, chives, and minced garlic.
- Add the egg and milk and mix until evenly combined.
- Divide the dough into 12 portions and drop onto a parchment-lined baking sheet.
- Bake for 18–20 minutes, until golden brown. Cool slightly before serving.
