Oyster shooters are part cocktail, part appetizer — icy, briny, and a lot of fun. They make a festive way to start an evening and are a welcome hair-of-the-dog remedy the next morning. These shots are fast and simple to assemble, and meant to be enjoyed in one confident slurp (chewing is optional).

Growing up near the Chesapeake Bay, oysters are part of my culinary DNA. I enjoy them raw on the half shell, fried for oysters oreganata, or gently poached in milk for oyster stew. They appear on holiday tables as oyster dressing and at backyard roasts. In this recipe, the oyster’s natural brine is the star, paired with a bright cocktail sauce and chilled vodka to create the oyster shooter.

  • Oysters – Shuck your own or buy pre-shucked oysters sold with their liquor. Keep the oyster liquor — you’ll add a little to each shooter. Remove any sand, grit, or shell fragments.
  • Cocktail Sauce – Store-bought works, but homemade is four ingredients: ketchup, prepared horseradish, Worcestershire sauce and lemon juice. It comes together in minutes.
  • Vodka – Use your preferred vodka. Each shooter uses about 1 tablespoon (1/2 ounce) but you can increase to taste.

  1. Shuck the oysters and place the oysters and their liquor in a bowl. If using pre-shucked oysters, keep the liquor. Check for and remove any sand or shell fragments so the shot goes down smooth.

2. Make the cocktail sauce: whisk together ketchup, prepared horseradish, fresh lemon juice and Worcestershire sauce in a small bowl.

3. Taste and adjust seasoning. Add hot sauce if you prefer more heat.

4. Arrange oysters, shot glasses, cocktail sauce and chilled vodka for quick assembly.

5. Place one oyster and a little of its liquor into each shot glass.

6. Spoon about 1½ teaspoons of cocktail sauce over each oyster.

7. Top with about 1 tablespoon of cold vodka (increase to 1 ounce if you want a stronger shooter) and serve immediately.

INGREDIENTS:

  • 24 oysters shucked or bought by the pint; keep them cold
  • ½ cup ketchup chilled
  • 3 tablespoons prepared horseradish chilled
  • tablespoons lemon juice fresh is best
  • ½ teaspoon Worcestershire sauce
  • ½ cup vodka chilled

DIRECTIONS:

FOR THE COCKTAIL SAUCE:

  • In a bowl combine ½ cup ketchup, 3 tablespoons prepared horseradish, 1½ tablespoons lemon juice and ½ teaspoon Worcestershire sauce. Stir until smooth.
  • Place one oyster in each shot glass, top with about ½ tablespoon cocktail sauce and 1 tablespoon vodka.
  • Tilt the shot glass back and enjoy immediately.
