Massaging Kale

Ingredients

  • 200 g curly kale (about 2 ⅚ cups)
  • 2 tablespoons olive oil (for massaging)
  • 200 g wild rocket (about 9 ½ cups)
  • 1 orange, peel removed and sliced
  • 1 blood orange, peel removed and sliced
  • 4 tablespoons seed mix
  • 1 avocado
  • 100 g feta (or similar salad cheese)
  • For the dressing:
  • 125 ml olive oil
  • 2 tablespoons honey
  • Juice of 1 orange
  • 1 tablespoon Dijon mustard

Instructions

  • Wash and dry the kale and remove any large stems. Pour olive oil onto your hands and massage handfuls of kale until leaves turn glossy and slightly reduced in volume. Finish with sea salt and lemon juice.
  • Place the massaged kale and rocket in a bowl and set aside.
  • Combine dressing ingredients in a clean, dry jam jar and shake vigorously until emulsified.
