If you love the fudgy, chewy Little Debbie cosmic brownie (or the Crumbl cosmic brownie cookies), you’ll enjoy this cookie version. The base is brownie-cookie dough and each cookie is coated with a smooth ganache for a rich finish. They’re delicious and simple to make.
Cosmic Brownie Cookies

These cookies use a boxed brownie mix for a semi-homemade approach that gives great chocolate flavor and a dense, chewy texture. You can make the chocolate cookies from scratch if you prefer—use a favorite double-chocolate cookie dough—but a fudge brownie mix is an easy shortcut that works beautifully.

See that interior? Rich, fudgy, and chewy. The ganache sets so the cookies can be stacked once the topping has firmed up.

Cosmic Rainbow Sprinkles
The signature “cosmic” chips are tiny chocolate pieces with a candy shell—similar to mini M&Ms but in a chip shape. You can find them at many craft or grocery stores, and mini M&Ms work well as a substitute. A few tablespoons are all you need to top a batch of cookies.

How To Make The Best Cosmic Brownie Cookies

Preheat oven to 375°F (190°C).
In a large bowl, combine the fudge brownie mix and flour.
Add the melted butter and eggs, stirring until the dough is smooth. A stand mixer or a sturdy spoon both work fine.
Fold in the mini chocolate chips.

Scoop dough onto parchment-lined or lightly greased baking sheets using a 2-tablespoon scoop or roll into balls. Bake for 10 minutes. Let the cookies cool on the baking sheet.
When the cookies are cool, prepare the ganache.
Combine the ganache ingredients in a small saucepan and melt over medium-low heat, stirring until smooth. Alternatively, microwave in 15–20 second intervals, stirring between each, until completely melted and glossy.

Spoon or spread the ganache over each cookie, then immediately sprinkle the cosmic chips on top so they adhere.
The ganache will set within an hour at room temperature; chilling speeds this up and makes the cookies easy to stack for storage.
Store finished cookies in an airtight container or wrapped in plastic to keep them fresh.

If you’d like to make these cookies entirely from scratch instead of using a boxed mix, try a double chocolate cookie dough flavored with cocoa powder, brown sugar, granulated sugar, flour, salt, melted butter, baking soda, vanilla, and eggs. That dough makes a larger batch, so plan to increase the ganache quantity if you bake more cookies.
