Pizza-Stuffed Potatoes: Cheesy Oven-Baked Recipe

Pizza appears in our kitchen at least once or twice a week.

Mr. How Sweet can’t go a few days without it. For him, a pizza loaded with pepperoni is a complete meal — no chicken or steak required. Sometimes we even add bacon to the pie; it’s a weakness we share.

I’m always experimenting with pizza-inspired dishes. While some of my creations don’t convince Mr. How Sweet that they’re “real” pizza, they’re still delicious — and often inspire the next night’s meal. I tried these stuffed potatoes with sweet potatoes as well; they worked nicely, though they weren’t quite as photogenic.

That said, when it comes to sweet potatoes, I’m more likely to fill them with brown sugar, cinnamon, caramel, marshmallows and bacon. It’s a sweet-and-salty dream.

The best thing about these pizza-stuffed potatoes is how customizable they are. I made a batch with pepperoni and sausage for Mr. How Sweet, and another with fresh mozzarella, tomatoes and basil for myself. That basil was worth every penny.

I’m also considering a chicken, broccoli and bacon alfredo version — an indulgent way to sneak in some greens, even if broccoli isn’t my favorite.

Even tiny green bell pepper pieces can send me into a tizzy of excitement. These are fun to make and great for mixing flavors so everyone gets a version they love.

Pizza Stuffed Potatoes

Ingredients

  • 4 medium russet or Idaho potatoes
  • 1 cup shredded mozzarella cheese
  • 1/2 cup very finely chopped green peppers
  • 1/2 cup very finely chopped mushrooms
  • A handful of pepperoni slices, sliced thin and chopped
  • 1/2 cup pizza sauce, or more to taste

Instructions

  • Preheat the oven to 400°F (200°C).
  • Poke holes in the potatoes with a fork and bake for 40–45 minutes, until tender. Remove and let cool slightly.
  • Slice around the top of each potato and scoop out the flesh into a bowl, taking care not to puncture the skin. Mix the scooped potato with 1/2 cup mozzarella and about 2 tablespoons each of the chopped peppers, mushrooms and pepperoni. Stir until combined.
  • Spoon the mixture back into the potato skins, top with pizza sauce, additional toppings and more cheese as desired. Bake 10–15 minutes more, until heated through and the cheese is melted.

Notes

Try other pizza-inspired variations such as buffalo chicken, BBQ chicken, margherita, pierogi-style, or any combination of your favorite toppings.
