Trader Joe’s spiral cut ham
uncured (about 4 pounds, fully cooked) or your favorite, see shopping tips -

onions,
chopped -
1
(16 oz.) bag
baby carrots,
halved or left whole -
1
(8 oz.) can
pineapple chunks,
unsweetened -
⅓
cup
honey -
1
(6 oz.) can
pineapple juice,
unsweetened -

tablespoons
reduced-sodium soy sauce -
2
teaspoons
fresh garlic,
minced -
Black pepper,
to taste
Instructions

Place the carrots in a microwave-safe bowl with a small amount of water. Cover and microwave 2–3 minutes to slightly soften—do not cook until fully soft, as they will finish cooking in the crock-pot. Drain any excess water.

Put the ham, flat side down, into a large crock-pot. If the ham includes a glaze packet or plastic covering the bone, discard those items. Arrange the softened carrots around the ham and sprinkle chopped onions over the top and sides. Add the pineapple chunks, including their juice, over the carrots.

In a small bowl, whisk together the pineapple juice, honey, reduced-sodium soy sauce, minced garlic, and a pinch of black pepper. Pour the mixture evenly over the ham, carrots, and onions.

Cover and cook on low for 3 hours. Baste the ham a few times with the juices from the bottom of the crock-pot while it cooks to keep it moist and flavorful.
