This might be my favorite summer dessert yet…

If you’ve tried my viral ice cream sandwich cake on TikTok and Instagram, you’ll recognize the idea but this version adds a banana split flavor profile that’s fun and nostalgic.
I’ve shared several ice cream sandwich cakes over the years, including a recipe in my cookbook and a festive 4th of July edition. This summer I wanted a fresh take that captures the classic banana split — and this cake delivers.
Meet the Newest Ice Cream Sandwich Cake on the Block
This banana split cake layers everything you love about a classic banana split into an easy ice cream sandwich cake. The base uses Neapolitan ice cream sandwiches, so each bite can include chocolate, vanilla, and strawberry flavors together.
It’s rich and indulgent, and every slice tastes like a nostalgic trip to an old-fashioned ice cream counter.

Because the recipe uses Neapolitan ice cream sandwiches, each piece is a little different and extra fun to serve. Chocolate, vanilla, and strawberry all make an appearance, so it’s like getting the best of three classic flavors in one dessert.
Also, just a heads up… a little goes a looong way.
This is a decadent, layered treat with two full layers of ice cream sandwiches, so it’s very satisfying. One small square goes a long way, but it’s a great option when you want a crowd-pleasing, no-bake dessert.
