Ingredients
  • 2 cups water
  • 1 cup steel cut oats
  • 1/8 teaspoon salt
  • 1 green apple, large, peeled, seeded and chopped
  • 1/2 cup dried cranberries
  • 1/2 cup pecans (or walnuts), chopped
  • 2 Tablespoons brown sugar, heaping
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon vanilla
  • 6 Tablespoons plain Greek yogurt (for topping – optional but recommended)
  • 1 teaspoon honey (to drizzle – optional)
  • Additional cinnamon (to sprinkle on top – optional)
Instructions
  1. In a medium saucepan, bring the water to a boil. Add the steel cut oats, salt, chopped apple, dried cranberries, chopped pecans, brown sugar and cinnamon. Stir to combine and simmer, stirring occasionally, about 7–10 minutes until the water is absorbed and the oats are tender.
  2. Remove from heat, stir in the vanilla. Serve warm if desired.
  3. To serve chilled, transfer the cooked oats to a covered container and refrigerate for at least 4 hours. Divide into six portions. Top each with about 1 tablespoon of Greek yogurt, drizzle with honey, and sprinkle with a little cinnamon. Serve and enjoy.
Recipe Notes

For creamier texture, add a splash (about 1/2 cup) of milk or vanilla almond milk at the end or substitute 1/2 cup milk for 1/2 cup of the water (use 1 1/2 cups water + 1/2 cup milk total).
