Why You’ll Love Feta Watermelon Bites
Stack a slice of sweet watermelon with a slab of tangy feta, finish with a peppery-sweet balsamic honey glaze and a touch of mint — it’s a compact balance of flavors and textures. These bites are great for entertaining since you can prepare most of the components ahead of time. Leftover watermelon is perfect for snacking or for making a fresh summer cocktail.

Prep Like a Pro
Chill the watermelon and feta first. Cold ingredients slice cleaner and hold together better when stacked.
Use a sharp knife. A sharp blade gives neat, uniform pieces for even stacking.
Cook the glaze until it coats a spoon and cool it. Let the honey-balsamic mixture reduce and cool before drizzling so it doesn’t melt the chilled watermelon.
Skewers are optional. Stacking the pieces into small sandwiches works fine if you don’t want to skewer them, but picks make them easy to serve and eat.

Chef Nadia’s Tip
How to choose a seedless watermelon: Pick one that is symmetrical and heavy for its size, with a deep green rind and a creamy yellow field spot where it rested on the ground. A hollow sound when you thump it indicates ripeness; a glossy rind can mean it’s overripe.
Substitutions and Variations
- Substitutions
- Feta Cheese → Replace with any firm, creamy cheese that comes in a block (halloumi, manchego, or a firm goat cheese work well).
- Watermelon → Cantaloupe or honeydew make a lovely alternative if you prefer a different melon flavor.
- Hot Honey Balsamic Glaze → Use store-bought hot honey and a splash of balsamic if you’re short on time.
- Variations
- Salad version → Chop the watermelon, feta and mint and toss with the glaze for a refreshing watermelon-feta salad.
- Longer skewers → Layer watermelon, feta, mint and repeat on a longer skewer for a stacked presentation.
The Perfect Pairings
These bites pair beautifully with light, summery mains and drinks. Use leftover watermelon in a refreshing mezcal or vodka cocktail, serve jalapeño smash burgers off the grill for a heartier meal, or offer a handheld wedge salad as a crisp side. Finish with a warm dessert for contrast.

They have a warm kick from crushed red pepper in the glaze, but you can reduce or omit the pepper for a milder version suitable for kids or sensitive palates.

Equipment
- cutting board
- sharp knife
- skewers or cocktail picks
Ingredients
- 1 small watermelon
- 1 block feta (large)
- 1/4 cup honey
- 2 tbsp white balsamic vinegar
- 2 tsp crushed red pepper (adjust to taste)
- Fresh mint, to taste
- 1/4 cup pistachios, crushed
Instructions
- In a small saucepan, combine the honey, crushed red pepper and white balsamic. Bring to a gentle simmer and cook until the mixture thickens enough to coat the back of a spoon. Remove from heat and let it cool completely.
- Cut the watermelon in half, remove the rind, and slice into a rectangle roughly 1 inch thick. Halve that rectangle lengthwise to create pieces about 1/2 inch thick.
- Trim the feta into rectangles that match the size of the watermelon pieces and slice each lengthwise so the feta pieces are about 1/2 inch thick.
- Assemble each bite by placing a watermelon piece on the bottom, a slice of feta in the middle, and another watermelon piece on top. Cut assembled pieces into squares if needed.
- Arrange bites on a platter. Drizzle with the cooled spicy honey-balsamic glaze, sprinkle with crushed pistachios and torn mint, then skewer if desired. Serve immediately.
