
Summer produce makes me happy. Living in Florida, I’m fortunate that warm-season fruits and vegetables are already showing up at the market. I’m especially inspired by summer ingredients because they lend themselves to simple, fresh recipes—think salads, smoothies, and anything you can make on the grill. Those are the meals I reach for when I want something easy and vibrant.
Today I’m sharing a recipe from the new summer e-cookbook Simply Summer: 20 Fresh Cookout Recipes, produced by Produce For Kids. The e-cookbook is available for free and is full of approachable, family-friendly ideas. This Peach Pie Smoothie caught my eye right away because peaches are one of my favorite smoothie fruits, and the addition of raw oats gives the drink some body and a pleasant nutty note.

Peach Pie Smoothie
Yield: makes 2 smoothies
Cook Time: 10 minutes

Ingredients:
- 3/4 cup plain almond milk
- 2 large peaches, chilled and sliced
- 1/3 cup rolled oats
- 1/2 cup plain low-fat Greek yogurt
- 1 tablespoon honey
- 1/4 teaspoon vanilla extract
- 1/2 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1/2 cup crushed ice
Directions:
- Combine the almond milk, peaches, rolled oats, Greek yogurt, honey, vanilla, cinnamon, nutmeg and crushed ice in a blender. Blend until smooth and creamy.
