This recipe is very kid-friendly. Start by processing shredded coconut until it forms a paste, then add maple syrup and peppermint extract to create a soft dough. Pack the mixture into discs by tablespoonfuls and chill briefly, then dip each disc in melted chocolate.

To make Junior Mints-style bites, simply roll smaller amounts of dough into tiny balls and coat them in chocolate. They set quickly in the refrigerator or freezer.

 

Can I use sweetened coconut?

Yes — sweetened coconut will work. If you use sweetened coconut and reduce the maple syrup, the mixture may be less sticky. Add water a teaspoon at a time if the dough won’t hold together until it reaches a workable consistency.

Dairy Free Peppermint Patties

Ingredients

  • 3 cups (240g) shredded unsweetened coconut
  • 2 tablespoons (30ml) maple syrup
  • ½ to ¾ teaspoon peppermint extract (food-grade peppermint oil)
  • 2 teaspoons coconut oil, divided
  • 1 cup (120g) dark chocolate, chips or chopped

Instructions

  1. Add shredded coconut to a food processor or high-speed blender. Blend, scraping down the sides, until the coconut forms a paste. The texture should hold together like dough when squeezed.
  2. Add maple syrup, peppermint extract, and 1 teaspoon coconut oil. Blend until thoroughly combined and dough-like. Scoop and pack the mixture with a tablespoon, roll between palms to form balls, then gently flatten into discs.
  3. Place patties on parchment-lined tray and freeze for 10 minutes to firm up.
  4. Melt the chocolate with the remaining 1 teaspoon coconut oil over a double boiler or in 30-second microwave bursts until smooth.
  5. Dip each chilled patty into the melted chocolate using a fork, tap off excess, and return to parchment.
  6. Refrigerate or freeze for 8–10 minutes, until the chocolate is set.
  7. Peel patties from the parchment and transfer to a serving plate.

Notes

Make Junior Mints

Roll smaller portions of dough into tiny balls and coat them in chocolate for bite-sized treats.

Using sweetened coconut

Sweetened coconut works fine. If the dough is too dry after reducing maple syrup, add water a teaspoon at a time until it holds together.

Storage

Best within one week. Store in the refrigerator in a container with a tight-fitting lid and serve chilled or at room temperature.
