  • 1 thawed pie crust (for the base)
  • 4 tablespoons butter
  • 1 medium onion, diced

  • 1 3/4 cups chicken broth

How to make chicken pot pie

Preheat your oven to 400°F (200°C). Lightly grease a pie dish and press the thawed pie crust into the bottom and up the sides. Optionally, you can blind-bake the crust for 8–10 minutes to help prevent a soggy bottom.

In a medium skillet over medium heat, melt the butter. Add the diced onion and cook, stirring frequently, until translucent, about 4–5 minutes. Sprinkle the flour over the onions and cook, stirring constantly, for about 1 minute to remove the raw flour taste.

Fold in the carrots, peas, corn, and shredded chicken, stirring until everything is evenly coated in the sauce. If the filling is too thick, add a bit more broth or cream; if too thin, simmer briefly until it reaches a scoopable consistency.

Spoon the filling into the prepared pie crust and smooth the top. Drape the thawed puff pastry sheet over the filling, trim any excess, and crimp the edges to seal. Cut a small cross or several vents in the center of the pastry to allow steam to escape. Brush the pastry with the egg wash to promote a deep golden color.
