I understand the appeal of make-ahead casseroles though: prepare them the night before and you only need to bake in the morning—more time to relax with family.

This apple crisp French toast casserole combines the comforting flavors of French toast and apple crisp into one make-ahead dish. It’s essentially a breakfast dessert that bakes up with tender, custardy bread, baked apples, and a crunchy oat topping—perfect for simplifying holiday mornings.

Ingredients

For the French toast:

  • 1/4 cup (57g) unsalted butter, melted
  • 8 large eggs
  • 2 cups (473mL) milk
  • 1/2 cup (118mL) half and half (or heavy) cream
  • 1/3 cup (73g) brown sugar, lightly packed
  • 1 tablespoon (15mL) vanilla
  • 1 1/2 teaspoons cinnamon
  • 4 cups chopped apples (3-4 medium apples)
  • 1 loaf French bread, cut into 2 inch cubes

For the topping:

  • 1/2 cup (110g) brown sugar, lightly packed
  • 1/2 teaspoon cinnamon
  • 3/4 cup (63g) rolled oats
  • 3/4 cup (107g) all-purpose flour
  • 1/2 cup (114g) cold, unsalted butter

Instructions

  1. Spread the melted butter over the bottom of a 9×13 inch casserole dish (3qt/3L dish).
  2. In a medium bowl, whisk together the eggs, milk, half and half, brown sugar, vanilla and cinnamon until well combined.
  3. Spread one third of the chopped apples in the prepared dish. Cover with half of the cubed bread. Repeat with another third of the apples, the remaining bread, then the last of the apples.
  4. Pour the egg mixture over the layers, pressing the bread down so it soaks up the liquid.
  5. Cover the casserole with plastic wrap and refrigerate for two hours or overnight to let the bread absorb the custard.
  6. Make the topping: in a small bowl, stir together the brown sugar, cinnamon, rolled oats and flour. Cut in the cold butter with a pastry cutter or two knives until the mixture resembles coarse crumbs.
  7. Cover the topping and refrigerate until ready to bake.
  8. Preheat the oven to 350°F (175°C).
  9. Remove plastic wrap and sprinkle the topping evenly over the casserole.
  10. Bake 45–60 minutes, until the topping is golden and the center is set. For a softer, bread pudding-like texture bake less; for a firmer set bake longer. Serve warm with maple syrup.
