Description

This Crab Louie is a bright, elegant salad that comes together quickly and makes a beautiful centerpiece for a casual dinner or a special gathering. Sweet lump crabmeat, crisp lettuce and radishes, creamy avocado, and soft-boiled eggs are dressed in a tangy, slightly spicy dressing. The contrast of textures and flavors—briny olives, smoky paprika and a touch of heat—creates a memorable dish that feels both luxurious and approachable.

While classic Crab Louie recipes can vary, this version emphasizes fresh ingredients and a homemade dressing that is easy to adapt. It’s perfect for entertaining because you can prepare most components in advance and assemble just before serving, allowing the crab and produce to shine. Serve on a large platter to showcase the colors, or portion into individual bowls for an elegant presentation.

Ingredients

For the salad:

  • 2 heads soft lettuce, washed and torn into bite-size pieces
  • 2 lbs fresh crab meat, picked over for shells
  • 6 eggs, soft-boiled (see instructions)
  • 1 bunch radishes, thinly sliced
  • 2 avocados, cut into chunks
  • 1 ½ cups pear tomatoes or cherry tomatoes, halved or sliced
  • 1 bunch chives, chopped for garnish

For the dressing

  • 1 cup mayonnaise (homemade or your preferred quality mayo)
  • 1 ½ tablespoons ketchup (for color and sweet-tart balance)
  • 1 ½ tablespoons hot sauce or buffalo sauce, adjust to taste
  • 1 ½ tablespoons finely chopped green olives
  • 1 tablespoon fresh lemon juice
  • Several drops hot sauce, to taste
  • 1 teaspoon smoked paprika
  • 1 teaspoon Aleppo pepper or mild chili flakes (optional)
  • 1 clove garlic, minced or pressed

Instructions

1. Make the dressing: In a bowl, whisk together the mayonnaise, ketchup, hot sauce, chopped green olives, lemon juice, smoked paprika, Aleppo pepper (if using), and minced garlic. Taste and adjust seasoning—add more lemon for brightness or more hot sauce for heat. Chill the dressing briefly while you prepare the salad so the flavors meld.

2. Soft-boil the eggs: Bring a medium saucepan of water to a gentle boil. Lower the eggs into the water with a spoon and boil for 7 minutes for a creamy, slightly runny yolk. Transfer eggs to an ice bath for a few minutes, then peel and halve or quarter just before assembling to preserve texture.

3. Prepare the salad components: Arrange torn lettuce on a large platter or divide among serving bowls. Scatter sliced radishes, halved tomatoes, avocado chunks, and chopped chives over the greens. Place the crab meat in the center or in small mounds across the platter to showcase it.

4. Finish and serve: Nestle the soft-boiled eggs among the salad. Drizzle the dressing lightly over the salad or serve it on the side so guests can add their preferred amount. Garnish with additional chives or a sprinkle of smoked paprika for color. Serve immediately to enjoy contrasts of cool crisp vegetables and tender crab meat.

Cooking is a chance to slow down and enjoy the process. Take a moment to arrange the salad thoughtfully—presentation enhances the experience. This Crab Louie is ideal for sharing; its simple preparation highlights fresh, quality ingredients.
