How to Make Matzo Ball Soup

Start the chicken broth

Season the chicken with salt and pepper and place in a large soup pot. Add quartered onion, halved garlic head, halved celery stalks, halved parsnip, and two halved carrots. Crumble in bouillon cubes if using and cover with filtered water. Bring to a boil, then reduce to a simmer and cook until the meat is tender, about 1 hour. Skim any foam from the surface as it cooks.

Make the matzo ball mixture

While the broth simmers, whisk the eggs in a bowl. Add finely chopped fresh dill, matzo meal, baking powder, melted butter (or schmaltz), filtered water, and a generous pinch of salt and pepper. Mix until a soft dough forms, cover, and let rest while the broth finishes cooking. This resting time allows the matzo meal to absorb moisture and makes rolling easier.

Strain the broth

Remove the cooked chicken from the pot. Pour the broth through a colander set over a large bowl and discard the cooked vegetables and aromatics. For an extra-clear stock, line the colander with cheesecloth. Shred the chicken meat and discard bones and skin.

Finish the broth

Return the strained broth to the pot, add the shredded chicken, and add the sliced carrots. Bring back to a gentle simmer.

Shape and cook the matzo balls

Using slightly damp hands, scoop spoonfuls of the matzo dough and roll into balls. Gently add them to the simmering broth and cook until they are set and cooked through, about 10–12 minutes.

Garnish and serve

Ladle the soup into bowls and garnish with extra fresh dill. Serve hot and enjoy the comforting combination of clear chicken broth and tender matzo balls.

  • 1 pound chicken drumsticks, bone in, skin on
  • 1 pound chicken breast, boneless, skinless
  • 1 large yellow onion, quartered

  • 4 medium celery stalks, halved
  • 1 medium parsnip, halved
  • 4 large carrots (2 halved for broth, 2 thinly sliced for the soup)

  • 5 large eggs
