Ingredients
- 3 cups (240g) shredded unsweetened coconut
- 2 tablespoons (30ml) maple syrup
- ½ to ¾ teaspoon peppermint extract (food-grade peppermint oil)
- 2 teaspoons coconut oil, divided
- 1 cup (120g) dark chocolate, chips or chopped
Instructions
- Add shredded coconut to a food processor or high-speed blender. Blend, scraping down the sides, until the coconut forms a paste. The texture should hold together like dough when squeezed.
- Add maple syrup, peppermint extract, and 1 teaspoon coconut oil. Blend until thoroughly combined and dough-like. Scoop and pack the mixture with a tablespoon, roll between palms to form balls, then gently flatten into discs.
- Place patties on parchment-lined tray and freeze for 10 minutes to firm up.
- Melt the chocolate with the remaining 1 teaspoon coconut oil over a double boiler or in 30-second microwave bursts until smooth.
- Dip each chilled patty into the melted chocolate using a fork, tap off excess, and return to parchment.
- Refrigerate or freeze for 8–10 minutes, until the chocolate is set.
- Peel patties from the parchment and transfer to a serving plate.
