Mint Chocolate Chip Brownies

St. Patrick’s Day is one of my favorite holidays. I’m Irish and I love anything mint, so this season always feels extra fun. I often make my homemade Minty Chocolate Cupcakes year-round when I crave mint and chocolate, or I’ll grab a tub of mint chocolate chip brownie ice cream. Yum!

These fudgy Mint Chocolate Chip Brownies are loaded with mint Oreos, topped with mint chocolate frosting, and sprinkled with mini chocolate chips. They evoke that classic mint-chocolate-chip ice cream flavor, but in a rich, brownie form that’s even better.

Mint Chocolate Chip Brownies

I usually make frosting from scratch, but sometimes I like to save time and dishes. For these brownies I used Duncan Hines Frosting Creations mint chocolate frosting mix. It’s quick and easy to prepare and comes very close to a homemade flavor—perfect when you want fast, delicious results.

Ingredients

 

  • 1 box brownie mix, prepared according to box directions
  • 16 mint Oreos
  • 1 Duncan Hines Frosting Creations Frosting Starters
  • 1 Mint Chocolate Frosting Flavor Mix
  • ¼ cup mini chocolate chips

Instructions

 

  • Preheat oven to 375°F. Line a 9×9-inch pan with foil and spray with cooking spray. Set aside.
  • Prepare the brownie batter in a medium bowl according to the package directions.
  • Pour half the batter into the prepared pan. Arrange a single layer of mint Oreos side by side over the batter. Pour the remaining batter on top and spread evenly.
  • Bake 30–40 minutes, or until a toothpick inserted in the center comes out mostly clean. Allow brownies to cool completely before frosting.
  • Prepare the mint chocolate frosting mix according to package directions, spread over cooled brownies, and sprinkle with mini chocolate chips. Slice and serve.
