These cookies are both tasty and nourishing. I first made them years ago, but they’re timeless: flourless, made in one bowl, and easy to adapt. Use maple syrup instead of honey to make the recipe vegan, and choose certified gluten-free oats to keep them gluten-free.

What’s Inside?

  • Honey (or maple syrup)
  • Peanut butter — natural peanut butter works well; other nut butters like almond or cashew also work.
  • Oats
  • Shredded coconut
  • Flaxseed (or sesame seeds)
  • Almonds or other nuts for crunch and garnish (peanuts, walnuts, cashews, or pecans are fine)

Combine the ingredients in a bowl, shape the mixture into cookies with your hands, press a nut on top if you like, then chill for 30–60 minutes. Store the cooled cookies in the refrigerator.

Ingredients

  • 1/2 cup + 2 Tbsp oats
  • 1/2 cup peanut butter
  • 2 Tbsp honey (or maple syrup)
  • 2 Tbsp shredded coconut
  • 1 Tbsp flaxseed
  • 8 almonds (or other nuts)

Instructions

  1. Mix the peanut butter with the honey in a bowl.
  2. Add the oats, shredded coconut, and flaxseed. Stir until the mixture is chunky and holds together. If it’s too sticky, add a little more oats.
  3. Form cookies with wet hands if helpful, and press an almond or other nut into the top of each cookie.
  4. Place the cookies in an airtight container or on a parchment-lined plate and refrigerate for 30–60 minutes.
  5. Remove from the fridge and enjoy.

Notes

Store these cookies in the refrigerator; they keep well for at least five days but won’t hold up at room temperature.
