How to make Griddle Mediterranean Vegetables

Start by slicing mushrooms and a red bell pepper. Slice half a red onion as well.

Roughly chop fresh spinach and mince the garlic cloves.

Place the prepped vegetables on a tray to carry them to your Blackstone griddle or flat top grill. The same tray works well for serving at the table.

Preheat the griddle to medium for a few minutes. Add the cooking oil, then spread the mushrooms, peppers, and onions on the hot surface.

Cook those for 3 to 4 minutes, stirring and flipping occasionally with hibachi spatulas or a spatula.

Add the chopped spinach, minced garlic, kosher salt, black pepper, crushed red pepper flakes, and oregano.

Continue cooking another 3 to 4 minutes, stirring so the spinach wilts and the flavors combine.

Finish by adding 2 tablespoons of balsamic vinegar and cook for 1 to 2 more minutes, mixing everything together to coat the vegetables.

Ingredients

  • cooking oil of choice
  • 1 red bell pepper, sliced
  • 1/2 red onion, sliced
  • 8 ounces mushrooms, sliced
  • 6 ounces fresh spinach, roughly chopped
  • 4 to 6 cloves garlic, minced
  • kosher salt, pepper, crushed red pepper flakes
  • 1/2 tablespoon oregano
  • 2 tablespoons balsamic vinegar
  • Optional: feta cheese, basil

Instructions

  • Preheat the griddle to medium heat for a few minutes. Add the cooking oil, then add the peppers, onions, and mushrooms. Cook 3 to 4 minutes, stirring and flipping as needed.
  • Add the spinach, garlic, kosher salt, pepper, crushed red pepper flakes, and oregano. Cook another 3 to 4 minutes, stirring so the spinach wilts.
  • Stir in the balsamic vinegar and cook 1 to 2 more minutes. Serve hot, topped with feta and basil if desired.
